Rub dill into the cuts of the dish and then insert lemon slices into the cuts of the fish.
Take a large piece of foil, and then place fish in the center.
When the smoker has preheated, transfer wrapped fish on the smoking rack by using tongs, close and lock the smoker, and then let smoke for 10 minutes.
After 10 minutes, remove fish in the foil from the smoker, fold the remaining foil over the fish to seal it completely, and then continue smoking for 45 minutes to 1 hour until cooked.
Check smoke and if it is stopping, refill the water pan and reload the wood chip tray.
